New to smoking meat. Bought a MES to ease my way into this amazing new world to me. I did so far, a few racks of ribs (turned out dry each time), wings (turned out ok), pork shoulder for pulled pork( turned out ok) and this past weekend a full packer brisket. (turned out amazing, at least to us.) Tomorrow going to do a pork loin roast.
