I stumbled onto this site yesterday and it saved my life (literally). Little bit about myself: I'm 48 years old, born and raised east coast, moved to KC, MO when I was 19 and got hooked on BBQ, I still have friends send me Gates and Son's (maybe the greatest mass produced sauce ever) and Arthur Bryant's (a close second). I have lived in California for about 20 years and have had a variety of smokers since.
Currently using a Traeger Lil Tex, modified with an aftermarket thermostat to allow more control. I know the Traeger is cheating a little but, I can get up just to mop in the middle of the night and not have to worry about checking wood and adjusting temperature. Have lots of experience with the smoker and all kinds of meat but, still just learning.
Amazingly had never done a brisket (not many to be found in CA, everyone is sold on tri-tip and Santa Maria style BBQ. Joined yesterday, got the crash course in BRISKET and had a very successful smoke on my first try.
Looking forward to spending lots of time with you guys
