So, I figured today is as good as any to give smoking some wings a shot. I have been reading through the forums all week trying to gain as much knowledge as possible for my first shot at these on the smoker. I think I am going to do them low and slow for 2-2.5 hours at 225* and then toss them on a hot grill to crisp them up at the end. I have been grilling wings with great success for years, but really want to learn to smoke them as well. I always marinate my wings for 12-24 hours in Team Realtree marinade for grilling, so I am going to stick with what I know for these as well. It adds great flavor that mixes well with wing sauce. I know a lot of you guys swear by Frank's hot sauce and butter for wing sauce, and I looked at it at the store, but once again, I am going to stick with what I know and go with Texas Pete's and butter. Once I get the cooking process right, I will give Frank's a try. I also have some ABTs and 2.5 lbs of fresh pork sausage going on this afternoon. Game time is 7:00 PM, so I am going to get started about 3:00 PM.
Got the wings in the marinade last night and into the fridge for an overnight nap.
