I'm trying my hand at jerky tonight for the first time. The recipe is simple enough:
- 2 lbs sirloin round. I had the butcher cut it into 1/4" strips which saved me a lot of hassle.
- 1 cup strong coffee. I used a short Pikes Place Roast from Starbucks.
- 1 cup Coke
- 1/2 cup soy sauce
- 1/4 cup worcestershire sauce
- 2 tablespoons hot sauce
- 1 tablespoon Tender Quick
It's been marinating overnight. Plan is to throw it on the Traeger this afternoon for 4 - 5 hours on smoke. I'm hoping for the best!
Any thoughts on what kind of wood pellets I should use for the best flavor? I have hickory, apple, pecan, and oak at my disposal. I'm thinking the hickory would probably give it the best smoky flavor.
