While I was waiting to finish the smoke and put them in the cooler. I decided to take the last of my pepper crop and make my new hot sauce..

So.. Brisket # 1 ( Butchers Injection)
Has reached 203 and is soft and plyable
Toothpick test says it ready so into the cooler it goes still wrapped in the paper
8 hours on the smoker.
While contestant #2 is at 190 .. both Wsm’s Are within 20 degrees of each other and this brisket is smaller ( due to shrinkage.. )
I can’t wait to taste the difference.

Man, epic side-by-side. I'm rooting for the Butcher's injected contestant. Did you have a phosphate component to that injection? I'm pretty sold on injection always. Can't wait for the results, nice cook !!
Both juicy but without a doubt. The one with Butchers Injection was the winner!
Softer , plumper and juicer..
I tried to keep the cook as close to even as possible .. but again each brisket cooks at its own rate. Both taken to 204..
My conclusion :
The Butchers Injection is awesome
My family agrees. I now see why Dave
