Water in the pan is mainly just for a heat sink and to add some steam, In my opinion it doesn't really add flavor just some humidity to aid in smoke penetration. I use sand in my water pan to act as a heat sink.

I see this is your first post here, when you get a minute would you do us a favor and go to "Roll Call" and introduce yourself so we can get to know you and give you a proper welcome, also would you add your location to your profile, we like knowing where you are when we talk to you, Thanks!

Any tree that was a fruit or nut tree is good, wild or not. And a lot of folk on here wrap in foil and add "something" to the package. Makes no difference what it is, just a flavor enhancer.

Have fun and...

I don't use the water pan for water. I have it double wrapped in aluminum foil (to keep it cleaner). When I do a brisket or pork shoulder, I just put one of those aluminum foil pans under it with whatever liquid I want at the time (which lately is Chef JimmyJ's Au Jus.
