Cured, Smoked & Pulled Pork Butt
I had a half of a Butt Curing in the fridge, Today was it's big day.
Butt cured for 8 days, Pulled it out this morning rinsed and soaked it, patted it dry and put a light coat of Garlic, onion & honey powder along with some black pepper. Let it sit in the fridge a couple of hours while I did a few other things.Fired up the smoker with a chimney of lit charcoal and a big split of Pecan, got up to 225º pretty quick,
Put the meat and beans on.
Didn't do a step by step, since I have done one before (JUST FOLLOW BEAR'S STEP BY STEP)
Started with a whole butt
De-boned and removed a little fat
Split in half
Weighing so I can get my TQ and Brown sugar measured correctly
Half a butt rubbed and in the zip-lock to cure
After 8 days rinsed, soaked, dried and seasoned
Waiting to go on the smokerBeans ready and waiting
Butt and Beans on
Have to have a little Boudin !!!
Everything on
Beans ready
Added Pineapple rings and juice, cover with foil and back on the smoker
Butt ready, Had to take a fey links and 1/2 the beans over to #2 son's
since he had ribs going on his smoker
