Chuck roast enchiladas

Today I also decided to make some enchiladas for dinner. Took a small chuck roast and hit it with HC Black. It went onto the pellet grill with some hickory pellets until it hit the stall. Then it went into a Dutch oven with broth until it was tender. Mixed it with some store bought enchilada sauce and assembled some bad boys.

That is some fine looking Enchiladas! We just missed the $2.99/lb Chuck Toast sale here. Next one, it will be Texas Red or Enchiladas for sure...JJ

Sure looks good! And an idea to share with my wife...we have two chuck roasts she smoked earlier this week, this might be a winner winner enchilada dinner!

Chuckies are twice the price of brisket down here, so we rarely buy it, but those enchiladas sure look good! And I could eat them every night, I really don’t care what you put in them. I like just cheese & onion, that is my favorite!
