Our son turned 1 Friday and even though we couldn't have a big party (thanks coronavirus) that didnt stop us from celebrating!
So here we go I got a 3 pack of babyback babyback babyback ribs from Costco. 1st time buying ribs from Costco I didn't know that they remove the membrane on the underside score!
Kansas city style rub on the 2 bigger ones.
Drizzeled some sourwood honey over them and rubbed it in the meat. Yes I rubbed my meat!
Reapplied a little bit more KC rub on top of the honey.
Had this rub sitting on my spice rack for a while so I put it on the small rack.
Into the fridge for a few hours before show time.
Extremely windy day forced my to move to the garage, I learned my lesson last time it was this windy I had to relight the propane smoker like a million times.
Beginning
1 1/2 hours
2 1/2 hours
3 1/2 hours
ready for sauce at 5 hours at 225 deg I turned up to 275 deg the last hour cause dinner time was getting close.
Brushed with Sweet baby Ray's bbq
Put them back in for about 20 mins or so at 300 deg to get the sauce sticky and put another light coat on after I took them out the smoker.
Kept the sides simple mashed taters baked beans and coleslaw.
Birthday Day boy had good time eating his 1st ribs but had even more fun with his cake!
