Taste really good, my wife even liked it the only thing she asked to do different next is maybe add some cheese to make pepperoni and cheese which is no problem.

Romano is a great cheese to add in to pepperoni!!

Hey Rich, just use paprika. Most pepperoni recipes have it as an ingredient so use a little more for a darker color....

smokerjim I was just in the thread looking through the formula . How was the heat ? Looks like a fair amount of pepper . That's a good thing , because I want that with pepperoni .

I was thinking the same thing when I was making it that this is a lot of pepper. I dont like real hot stuff. But it didnt turn out that hot. I would say perfect for me, just a bit of heat but not over powering.
