New guy from Iowa here. I have lurked here and many other smoking related sites for awhile now and figured time to jump on board and try to contribute some. I guess I am a 5th generation "meat man". The previous 4 generations worked in the locker business. I can't claim to be that skilled but have been become a "hobby processor". I mainly process deer that my friends and I shoot all fall and winter. I have averaged over 1,000 lbs of all kinds of sausage through the smoker each of the past couple of years. I also do chickens, turkeys, and a few loins. I am slowing way down this year, and hope to expand my horizons. Always looking for new sausage recipes and hoping to learn about doing ribs, briskets, and so on. Thanks for the time.
