So with the move coming up soon we are focused on eating lots of freezer stock items....so today’s trifecta smoke is a 4-Bone slab of ribs for course one, then som pulled pork for course 2 and a bird for course 3!
Since lots of items are getting packed up I am just seasoning with the stock spices still on the shelf. The beet got SPOG & Creole....it is a wicked combo for beef!

In my hast to fight off the kids I forgot to get a pic of the finished slab.....today is just a simple summer beef plate, a rib and watermelon!!

the crust was pure beef bacon!
