Howdy all.  I was register here previously I think (so many forums, so little time).  Anyway, I did my first local 'amateur' comp two years ago and didn't fare that well.  I enlisted a buddy to help with the same comp last year and we did much better (first in brisket, tied for first in ribs, 3rd in chicken and Peoples choice).

Fast forward 6 months or so and we decided to buy a food truck and take our show on the road!  Anyway, being asked to do a wedding reception for 200+ brought me back looking for some guidance (head on over to the catering section and help us out!).
