Found this site a few weeks ago when I was researching building a smoker. I've been making and smoking venison and venison sausage for about 15 years. After looking at this sight, I'm pumped about starting a new direction with my smoking endeavors. My daughter and I are making our first fatties today! I've been using a cabelas propane smoker all these years and have modified it to hang sausage links so we can get about 25lbs in it when we do venison ( I really need a different approach). Will be taking the 5 day e-course soon!
