I agree that the dedicated stuffer is the way to go, but there's no need to spend $150-$200 for a 5lb stuffer. You can get one from Grizley off eBay for like $70. If I was going to spend $150-$200, I'd get a 15lb. I think you can still get one on-sale from Gander Mountain online for $179 and use a coupon code to get an additional $20 off (there is a topic about the coupon code on this forum within the last week or two).
 
Nice first round, Mark! The replies you got all are steering towards greener pastures, but also like was said, practice..........the learning curve will always be there for everything new, and then, the labor of love will start again.

You'll do fine...you're a couple steps ahead of me on the sausage...right now, I can only experiment with recipes and figure out which ones I'll do for my cased sausages when I can get that far into it...though my uncased sausages are very good as is.

Stick with it, as I'm sure you'll be glad you did!

You're probably right, Panther, re: price. I'm Canadian, so there's an exchange to figure in. Got mine from LEM, $139.00 US, after exchange, shipping and local taxes it added up to almost $200. When I bought it, there was much discussion about plastic vs. metal gears, and I went with a model with metal gears which I think typically cost a few more dollars. I could've got a 15lb unit on eBay for about that, but I missed that auction, and well, got tired of waiting for another.
