smoked chix chimi........

    had some leftover smoked chix so i was in the mood for a good ass chimi.....

    here is what i started with.......

    fried up some buckboard for grease.........

    added some green onions..........

    added the chix, corn and green chili sauce.............

    then finished with cilantro..........

    then ya gotta get a big ass tortilla....notice the sacrificial kid next to the dog.....

    then ya fill the damn thing...............

    had to use the sawsall to fit it on a 12" plate..........

    yes, i just put it in my mail box about 2 hours ago and if yer lucky we will only reach 100 deg tomorrow.................it's in there wth some chz someone sent me to pass on to you!

    actually, i am making a new batch of my rub so you and brian should be seeing some soon...............

    cant beat deep fried food

    chicken gravy on top?

    looks like you need some more cheese on it

    i used this for the chicken and on top...........

    and there was lots of chz inside.................but it couln't hurt to top it off neither!

    the cheese i use is called menonita or chihuahua, it is a mild creamy chz that was first produced by the menonite communities in northern mexico.........it is kinda like jack.

    Man oh Man there Chef thats some mighty fine lookin chimi. I really like the chilis too on the inside. Now that looks like what we have here in the sunshine state but it called a wet burrito but with red chili sauce over the top.[​IMG][​IMG]

    terry, i just heated up some more of the sauce and put it on............

    mark, i don't mind red but it really don't like me.........
