Prime cowboy chop

    I used Morton's Steakhouse cajun rub for this one.

    White pepper, kosher salt, cayenne pepper, garlic and onion powder.

    Smoked til IT 125. Reverse seared of course.

    Looks great! Need a longer bone then you can just use it as a handle.

    I dint get the long ones here where I'm at. It was good though.
