I am going to try my hand on my wood smoker and cook 4 cases of chicken quarters or wifes employment this next week, i have done practice run with a whole chicken cut in half and basted with olive oil then added rub and let sit 4 hours and smoked chicken at 225-250 for almost 2 hours. chicken came out fair but i need more professional opinion how i should handle a larger amount of chicken and it turn out good, i have mesquite wood and large 2 door smoker and dual axle trailer with warming box...any ideas
