Hello from Phoenix, AZ. I Moved from Baltimore, MD after the my 6 year Army tour to Phoenix, AZ in 1970. Just recently retired after 44 years in the telecommunications industry and now have more time on my hands to explore smoking meats and working on my bucket list. For the last 15 years I have been grilling and smoking on charcoal grills using the indirect and off set methods. Just bought a 2 door Master Built Gas Smoker and I have been checking out this site and have learned some good tips. Already bought Jeff's Smoking Meat Book and 5 day smoking PDF. I’m finding that trying to get the box temperature below 250 degrees is difficult when the outside temperature is 100 and the box temp is 126 before you give it gas. This is the life in Phoenix in the summer but come winter it will be great smoking weather. I’m looking forward to the ideas and tips from my fellow smokers.
