Hello all,

My name is Tom and I currently live in northwest Washington. I am an active duty military guy that likes to cook and smoke. I currently have a normal gas grill, XL Big Green Egg, and three ugly drum smokers that I built. I am looking to build a reverse flow stick burner (have the pipe just need to get the rest) and ultimately want to build a insulated gravity feed smoker. Looking forward to learning from this site and getting some ideas to help with my smoker builds and learn some on the cooking side too...still messing around with brisket...while everyone that eats it says it is great I am not happy with it so I still need to work on it and I hope to be able to do that through this forum. Thanks for having me and take care!

Welcome Tom and thank you for your service! You'll find a wealth of info and a lot of great people here. Post a question in the appropriate forum and it will be answered. Many very knowlegible folks here always willing to help. Happy smokin', David.
 
Welcome Tom. My experience with brisket is the same, others compliment me but not up to my own standards...so try, try again...but as I've seen others say, at least in this hobby, we get to eat our mistakes.

Welcome Tom try a beef shoulder clod it's the whole beef shoulder !!!!! Low n slow and it's better than a brisket in my opinion

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
