Hi all!

I recently (Saturday) bought my first smoker from Home Depot (Masterbuilt Pro Dual Fuel Propane/Charcoal Smoker).  Yesterday, I set out to smoke about a 7 lb pork butt.  Not knowing what I was doing, I thought it would take an hour/pound.  Boy was I wrong!  I started at about 11am with the smoker at between 200 and 225, with dreams of being done by dinner.  At 10pm, with rain about to come down, I had to pull it out.  It had plateaued at about 176.  I ended up shredding the pork, which obviously was a feat in and of itself.  I have another one of these bad boys in the freezer, so I will make sure to give myself plenty of time next time (I'm thinking at least 18 hours).  The flavor of the pork turned out well!  I'll take it for a first smoke, but obviously there is much to improve upon!
 
Welcome to the forum!  Butts can be stubborn.  My last 9 lber took over 20 hrs at 225.  I am now on the 24 hour band wagon on big butts.  I start them 24 hrs before I want to be done knowing I can keep it warm once it's reaches 205.

Welcome! Sounds like trial by fire already! Many people wrap the butt in foil when they hit the stall in the 170s. It's very common! The foil helps bump it past that purgatory, but it'll cost you the bark! Good luck with the next one. Sounds like you are in it for good now!
