My Andouille Weekend

    With all these nice Andouille posts going i might as well do some.

    Using Sassafras pellets on the smoke slide.


    Dry hang (blooming is just a fancy term for drying)




    These i did last year. Photo Bucket had a snafoo a while back and i lost some of my $$ shots

    I sure could use a bit of that sauteed with some onions, peppers and garlic in an omelet for breakfast.

    I can smell it better from here!

    Heck, I can almost hear the NEPAS Triplets munching on it from here !!

    My cave isn't very far from the NEPAS Gazebo.

    Thanks nepas.  That is on my short list for sausage making.  We can't buy a good andoille here, so I might as well make my own.  Yours looks great, but what is new about that?
