Memorial Day brisket

  1. First smoke of the season. Happy summer everyone. Got the day off and making some brisket

    8 lbs from the organic butcher. Starting at midnight. Using the bbq guru party Q and got her set for 227 just because. Cosmic cow rubbed and marinated for 24 hours. Hoping for a 10-12 hour smoke. Hitting the hey for a bitt while the magic happens. I'll check back in the early hours of the morning.

    Best of luck to all you Memorial Day smokers out there. Thank god it's summer time again.

    Looks great so far..... But BGE seasoning & cookin with a WSM ??? Is that illegal to do ? :laugh1: :biggrin:

  4. About 7 1/2 hours on WSM holding temp like a champ. Reading an IT temp of 167

  6. 11:00 hour smoke and she's done IT 196

    Now time to let her rest for a couple hours and chow time.
