So here's the deal; we're going to the cottage and I'll be smoking a brisket and a butt at some point over the course of the week. I've always used chips since the instructions (I know, I know, I read them) explicitly say not to use chunks. The things is I find using chips requires a lot of attention to make sure they aren't catching and to make sure I'm getting all the smoke I can out of them without being wasteful. Has anyone tried using chunks instead of chips and had success? If I'm doing two recipes with several hours each of smoke I'd like to achieve consistent and even smoke while being able to enjoy the cottage. Thoughts anyone?
