Hello everyone. I have just joined and am looking forward to all the wonderful info that I can get from you all. I am a graduate from The Pennsylvania School of Culinary Arts and have had the privilege to work for some amazing Chefs. I am getting ready to open up my first Café in Jacobs, PA in Sept. I know little about smoking and want to know as much as possible. I have always wanted to do this style of cooking. My awesome wife just bought me a Kenmore Grill with a smoker.
