Yesterday I did a rack of St. Louis style ribs on the new UDS-55, second cook, using the FB200. Once it settled I was able to go do some other things while keeping an eye on temps occasionally to be confident all was well. No pics of the ribs but they were good. It held great until the end when I was probing and brushing with the lid off.
