lol.....I know that was rather corny, but I couldn't think of anything clever at the moment. Anyway, my name is Vincent, I am a professional cook living in Charleston, SC. I have always been interested in grilling, smoking and all things contained therein, but beyond making amazing sauces to go with my meats, I have been unable to master these two things.....mostly because charcoal and I can't find a middle ground between being too hot and going out too soon, and because I have only ever managed to think about building a smoker out of a steel trash can with a cooking grate and some cinderblocks.........true story. Anyway, I have been perusing the internet, searching for some help with a job I have coming up for a business I am trying to get off of the ground, and stumbled upon this site. The posts on here seem very well informed, and are always presented with manners and respect.....which immediately made me wanna join up! So I did. I may not be of much help with the "how to" at the moment, but I am certainly going to irritate you with my "how do I" questions for at least the next four months of Charleston's summer, lol!
