lol.....I know that was rather corny, but I couldn't think of anything clever at the moment.  Anyway, my name is Vincent, I am a professional cook living in Charleston, SC.  I have always been interested in grilling, smoking and all things contained therein, but beyond making amazing sauces to go with my meats, I have been unable to master these two things.....mostly because charcoal and I can't find a middle ground between being too hot and going out too soon, and because I have only ever managed to think about building a smoker out of a steel trash can with a cooking grate and some cinderblocks.........true story.  Anyway, I have been perusing the internet, searching for some help with a job I have coming up for a business I am trying to get off of the ground, and stumbled upon this site.  The posts on here seem very well informed, and are always presented with manners and respect.....which immediately made me wanna join up!  So I did.  I may not be of much help with the "how to" at the moment, but I am certainly going to irritate you with my "how do I" questions for at least the next four months of Charleston's summer, lol!  Look forward to speaking with you all, much love, and God bless!
 
Welcome to the forums!  Glad you've joined us.  You've found a great place to learn and share ideas on our favorite pastimes...grilling, smoking, and curing great food!  There are lots of friendly and knowledgeable folks here who really enjoy helping one another.  Just ask any time you need help and you'll get plenty!  And never worry about irritating anyone here with "how to" questions, that's what these forums are all about...

Hello Vincent and welcome to the fun.  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  The trial and error method works well.  We will try to help you keep the errors to a minimum since we already made 'em for ya.  Nothin wrong with that trash can idea, just make sure it aint galvanized.  I have dug a hole, used 3 brick halves and an oven rack before for grillin.  I am also a long time member of the smokin 12 step program.  Proud to say that after almost 40 years I am now on step 2.  I will admit I have a problem.  I just don't care yet.
