Hi, I am from Indiana my husband got a bright idea and built a smoker that looks like an outhouse it does a good job at what he wants but have a problem keeping temperature​ under control he is using a turkey fryer burner with a cast iron skillet to create smoke the problem is on long smokes he has to constantly tickle the propane regulator, what do some of you use to keep the temp under control?

Sounds to me like he may be using too big of a burner for the space he's trying to heat.
