My name is Jay I'm from New Orleans Louisiana. I come from a long line of Italians and we all love to cook . I'm kinda new at smoking, although my father and I smoked many turkeys for Thanksgiving and Christmas over the years. Last year I smoked a large brisket for Thanksgiving and it came out awesome. I plan to do another brisket this year for Thanksgiving and some other smoked meats. All of the meats that I've smoked thus far were done in a small cheap version of the Brinkman smoker and that is most likely what I'll use again since I am familiar with the operation and probably will not be able to afford a nicer smoker before the holidays. I joined this forum so that maybe I could get some ideas and tips on smoking and maybe share some of my own stuff as I go along in my smoking adventure.
