Maui, Hi.
Aloha All,
I went to a Luau last month. On the pupu table were mounds of smoked pig and goat. Needless to say the smoked meat didn't last long. A few days after I was passing through WalMart and they had some GOSM on display. On a whim I picked one up. Only thing is I don't know much about smoking pig / goat or anything. Surfing the Internet I stumbled on to this forum. I got some tips and since then have smoked about 6 chickens in the past three weeks ...and did the 3-2-1 thing on some baby back ribs on Saturday. I'm learning.. but I got a ways to go yet..... At least my efforts have been edible.

I'm hoping that when get a little better at it, I'll see if I can barter some of what I got with the cagey hunters around here who may be willing to share some of their smoke pig/goat recipes.

Duplicating Lulu roast pig on a smoker might be a bit dificult as they don't use wood other than to get the rocks hot - it sort of steams on the hot rocks. Pulled pork is about the closest and the added smoking woods just make it all that much better! Enjoy!

Try some guava or kiewe on that butt - it's great stuff!
