Aloha All, I went to a Luau last month. On the pupu table were mounds of smoked pig and goat. Needless to say the smoked meat didn't last long. A few days after I was passing through WalMart and they had some GOSM on display. On a whim I picked one up. Only thing is I don't know much about smoking pig / goat or anything. Surfing the Internet I stumbled on to this forum. I got some tips and since then have smoked about 6 chickens in the past three weeks ...and did the 3-2-1 thing on some baby back ribs on Saturday. I'm learning.. but I got a ways to go yet..... At least my efforts have been edible. I'm hoping that when get a little better at it, I'll see if I can barter some of what I got with the cagey hunters around here who may be willing to share some of their smoke pig/goat recipes.
