Just found this Forum and have been involved in cooking Bar BQ for a lot of years. I grew up in Texas and still live there. I have had a lot of mentors in cooking bar be Q and I feel it has helped me cook all kind of wild game from Nelgi, Emu, Elk, mountain Lion and plenty of dove and quail. I also have been involved in a ton of Cook-offs through the years. I'm a corporate pilot with a passion for cooking. My job is mainly running the flight department, but I also get to coordinate our Hunting Lodge Menu for our clients. I currently smoke all out meats in a H300 Pro Smoker. It is hard to get use to because it is Eletric and has a small pan for wood dust. My first attempt was great and the baby back ribs were amazing. Also this unit will be great for jerky for the upcoming deer season. I will let you guys who things turn out.:grilling_smilie:
