Hi guys. I am from Denham Springs La. (Near Baton Rouge) I have been smoking for a while casually. I have a cheapo Brinkman (R2D2) which I find myself loading to the gills on a lot of weekends, so I decided it was time to step it up a notch. I currently have a custom 48" SFB being fabricated by Mr. Bell and I can't wait to get my hands on it. I love to cook, so probably like many of you I find myself as the unofficial caterer for all my friends and family. I have a Jambalya rig that I can feed 100 out of. It's also not uncommon for me to boil 200-300 lbs of crawfish. I loved BBQ and smoked anything, so I'm looking fwd to learning a bunch on here. I have a ton of guinea pigs waiting to be fed.
 
Welcome to the forum. I can't wait to see some qview of your smokes and especially would love to see some qview of you making jambalya and crawfish. I spent some time down in your neck of the woods when I use to travel for work and I love the crawfish and jambalya.
 
Thanks for the warm welcome. I have a big Jambalaya tailgate coming up next month for the LSU - Alabama baseball game. It should produce some good pics.

My in-laws live in Denham Springs so I try to avoid the area. Keep in touch, there are enough Louisiaina SMF members maybe we need to develop a chapter.
 
First off welcome to SMF. It sounds like you are well on your way to be an outstanding new member of this fine site. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
