Nate here, smoking in Western Colorado (just meat, not that other stuff Colorado is well known for smoking these days).
I've been playing around with fire and smoke and the flesh of some of God's tastiest little critters for years now. I've read your guys advice on this site quite a bit, and finally decided to come out of the shadows and say hello.
I've used a little bit of everything, a Brinkman Electric Barrel smoker I inherited from Granddad, charcoal and LP. Just bought a Chargriller Duo with the horizontal firebox and am working on getting it running in the sweet spot. I've done a few test fires and am still working on getting the right balance of charcoal and wood for a consistent steady quality smoke. Any advice is always appreciated.
I'll be throwing a couple racks of St. Louis style on tomorrow, going to spend most of today just playing around and getting the feel for my new machine.
