Hello from WI

    Hello everyone

    My name is Chris and while not new to cooking I am brand new to smoking.  I have done it on the grill in the past with good results but last Christmas received a smoker.  It is a BBQ Pro offset smoker (sorry im not quite familiar with all the terms and acronyms yet).

    Today I am trying chicken thighs for my first attempt. Yesterday I seasoned up the smoker and the chicken is in the brine as I type.

    Figured if they got messed up it wouldn't hurt  the pocketbook too much. I look forward to browsing the site and hopefully get a few pointers from all of you.
