Hey everyone, Dan here from Virginia's 757. I found these forums kind of by chance as I was looking for some smoking recipes. I have to say that this site is awesome. So much information. I currently own an Char-broil offset smoker/grill.  I have had for a year now and think that I have finally figured out how to maintain temp in the smoker.  I must say that the meat is much better now than what it was when I first started.  I am looking forward to reading through the different treads and improve myself as a pitmaster and hopefully help others. Thank you for letting me in.
