Greetings from Nebraska!

    My name is Charles, I am definately a "just learning" type of guy at the moment, I've had my smoker, a Masterbuilt digital cabinet, for about a year, and i've used it probably 6 or 7 times. I have tried brisket, pork shoulder, ribs (baby back and st louis), and today I am doing a chicken. The pork shoulder and brisket turned out the best, the ribs tasted good, but I don't think that I prepared them correctly (pre smoke) because they weren't exactly easy to eat. For xmas this year, I am planning on taking on a turkey, hopefully that doesn't end in disaster. Overall I just like sitting on a sunday afternoon and putting a good smoke on something! Glad to be hear, hope to learn alot!

    6-7 times in a year...well hopefully you will read around, get inspired and fire that baby up 60-70 times a year.

    I am in holdrege, ne. Bout 30 miles south west of kearney, the chicken turned out well, although not as much smoke flavor as i'd hoped, it was a bit chilly out and the bird took forever, qview to follow! Thankyou all so much for the warm welcome!
