Hello, my name is James and I am glad I found this community! I am fairly new to smoking but not new to cooking. I was a Chef for 12 years and Executive Chef for about 8 of those. I just never had the time to really get into smoking that heavily and now have the time and want to learn as much about it as I can. I live in Va and have recently bought a Char Broil smoker with the side firebox on it. I hound out later that that is not a very good one but with some mods can be decent. I welcome any and all suggestions and look forward to being a part of your community!
