First Fattie and First Q-View

Ok guys.. I have finally rolled my first sausage fattie!!
I used the standard sage sausage, sliced some mushrooms, green peppers, onions, spinach, and of course some cheddar cheese.

Rolled it out using greased wax paper for the roller, rolled in back over some strips of bacon for good measure. Threw the thing on the smoker around 230 degrees or so till it got to about 160 in the center. Think it was about 2 - 2 1/2 hours or so. I used a combo of Hickory and Mesquite wood.

Now the wife isnt too keen on sausage but what a trooper she managed to get 3 big slices down her neck.... she says I can make that again.

Congrats on the tasty fatty and the qvue, both are great for a 1st timer! Great ingredients in the fatty, can't go wrong with those. Smoke ring looks good!
