Tomorrow will be the first pulled pork smoke on the Lang, I am worried about running out of wood, rain. etc. also screwing up. 30 in laws coming over for party. They are driving 60 to200 miles to be here, the first time I cooked on it temp management wasn't fun but the ribs were great. wish me luck pictures to fallow. I don't think I will sleep well tonight.

All went well, temperature was a lot easier to control, Put a hook on the lower lip as BBQ RON suggested so as not to cut the wires off my therm probes. spritzed with a mix of pineapple syrup left over from a double batch of Dutch's beans and rum, gave them a nice shiny glaze.





Now maybe I can relax a little the next time I am cooking for more than the wife and kids on this thing

Man they look great! Just a tip if I may. Once temp is reached close one fire box damper completely and just use one open about 1/2 inch. Control heat from there with size of fire. 3 splits an hour should do it.

After a couple smokes you'll know exactly how she likes to run and you won't even think about it
 
Thanks, That is the kind of info I need, no info with it and couldn't find anything on the website other than cleaning and seasoning. Any other tips please let me know. It is a lot easier than trial and error.
 
Everything looks great and you did all thats worring but then if we didn't worry things wouldn't come out so well. Great Job Gary
