Been away a while but still smoking!!!   Got 2 racks in the Smokin-It #2 right now.  Gonna pair with some Cole slaw http://www.smokingmeatforums.com/t/166894/the-best-cole-slaw   and some baked beans mmmmmm.

I will try and get some finished pics up cause I forgot to do the pre- pics

Well the pics will have to wait.  I will tell you that I cooked them at 225F for 6 hours....never foiled and didn't spritz.  Didn't open the door to "check on them" and they came out PERFECT!  My wife and I love fall off the bone ribs and these fit the bill.  They were juicy and delicious with just a tinge of heat from my rub.  I swear these are the best BB ribs I have ever done.  Wife and daughter exclaimed " they were to die for".  YAY ME!!!

I paired it with my cole slaw recipe (above) and some bushes baked beans (Doctored with yellow mustard and beown sugar)  I am full....happy and on my 3rd Manhattan cocktail!
