Cool way to grind sausage

I saw this on a show today, for twice ground sausage, after first grind, push out ground sausage onto a cookie sheet about one inch and half thick, then punch down a line to create 1.5 inch strips, put pan and sausage in freezer about thirty minutes until just partially froze, then separate a long strip and run through grinder a second time.

That's awesome. I have duck and pork sitting in the fridge for bockwurst I'm making tomorrow. I'm going to give this a try.

They just grabbed a entire partially frozen strip and ran it right into the grinder, it was as long as the sheet pan was wide!
 
Been doing that for years.  I have a rimless cookie sheet and I use a pizza cutter wheel to make the strips.  Pat it out about 1" or so thick and cut into 1" strips.  You don't need to hard freeze it, just enough that the "stick" holds it shape so you can let it feed down the throat of the grinder.
