Thoughts on curling baby backs into a circle and skewering to save room?
So, sort of like a standing rack of ribs? Why not! It might be a great presentation also!
I've never done this, but have heard and read of others doing so with success. I'd think you might have to be careful about how much "overlap" there is of the meat, which could affect how much it is exposed to the smoke. Maybe someone who has tried that technique can give better input.
Yes, will look nice and fill the center with a small cotainer of your Sauce. Add friesthere too and have the whole meal on one dish...
