    A buddy stopped by with a box of salmon. Said here! Now that your tbs house is running go play. I'll be back in a week...............lol This morning I started to brine it maybe 10 to 15 lbs worth. 1 gallon water, 1 heavy cup b sugar 1 cup kosher salt 2 tbs garlic granuals, 2 tbs onion powder, 2 tbs cbp  3 fresh squeezed lemons and zest of one lemon. 2 day brine rinse dry then smoke with either alder or pecan coin flip will decide lol  Pic will follow when smoking,

    2 days is a pretty long brine period. Usually 12-18 hours is plenty for salmon. Don't forget to let it air dry to form a pellicle prior to smoking.

    I used to do 24 hr brines which were pretty good 48 hrs is better.
