My wife has been trying to get me to help with the cooking for 40 years, but was not very successful. Now that I'm retired, I guess I'll step up! "We" saw this Oklahoma Joe "Highland" smoker and decided it was time to get more involved. I've grilled for a while, but this smoking stuff looks to be a bit more complicated and challenging. I was raised in Texas, so I love to eat all kinds of BBQ (grilled/pit/smoked/etc). So glad that I found MeatForums.com ! Haven't seen the whole website, but it really looks informative and helpful. Wow! Some of y'all really modify these offset units to improve your cooking. Think I'll stick to the basics at first, then try some of the modifications later on. I guess it is time for me to work at becoming a family champ of backyard cooking!
