Happy Saturday. My name is Shawn and I live in Mesa, Az. I'm a newbie, but have been enjoying playing with my smokers. I have been using a Luhr Little Chief, an ECB and just picked up an Oklahoma Joe's horizontal offset a week ago on Craig's List for $80. I'm not sure which model it is, the metal is about 1/8" thick and the smokestack bolts in to the back. The firebox is on the left and it has plastic wheels about 6" across.
The baby backs I've done on the ECB and Little Chief have come out pretty good using Jeff's rub and sauce, but I didn't fare quite so well with the OK Joe's smoker. I couldn't get the temp down low enough and they came out a little dry. I am going to play around with it tomorrow and try to get the temp down while smoking a few fattys. I smoked one coated in rub last week and it was gone in about two minutes. This weekend, it's time for some experimentation. The Sprouts nearest me has a chorizo I want to try .
I've got to get back to work. The SEMs don't run themselves, no matter what the IE's models say.
