I gotta use these up before they get dry.

Making 2.5 lbs of Summer Sausage footballs.

My cannon at the ready.

These are natural hog stomach sewn together to make little footballs. Each one will hold around 1 1/4lb unless you stuff them tight like i did the one. You might be saying how much them foosballs.....Like $8.50 ea

The casings are salted so i keep em vac sealed. The paper towel is in there to catch any salt or moisture from getting into the seal area.

Going in the fridge tonight and getting heavy hickory smoke tomorrow. Might go into the smokehouse with them. Prob looking at around 12 to 18 hrs.
 
Can't wait to see the finished product. I saw those casings in the Sausage Maker catalog.


I get the casings like these at a local menonite owned butcher shop.
 
Those look like they are a lot of fun. What kind of goodness did you stuff them with

Yup thats where i get em at. I try not to stay in there long when the owner lady is there, she likes to give me the 3rd* about smoking and being safe. Ya like i'm major competition for them.

I was getting the smokehouse ready for the SS Footballs and looked all over for my HD extension cord and it seems someone needed it more than me.

So i had to use my backup.

Yeah thats why i only buy 5 at a time. The ones from sausage maker are cloth.

What was the highest temp you got them to?

 Also what is the lowest temp the smoker you used can go to?

Looks like they played a tough game. Probably against the SeaHawks and got there Butts Kicked.

I use a PID to control my temps.

High on this was 170*

I did some sweet lebanon at 85* for 50 hours

Sorry, nepas dont like football.

Only likes hanging with mrs nepas, smoking, bbq, huntin, fishin, drinkin with friends.....ya i know boring...HA
