I’ve been using hickory for awhile. Have recently found some hardwood from a local person. My question is can I use this type of wood to smoke with
 
Majority of hardwoods are okay to smoke with. However, stay away from osage orange aka hedge, walnut, black/honey locust and hackberry.
You can identify what type of hardwood you have by the bark.

Yeah, a little more info is needed on the species of the woods in question.
 
Most all nut woods aside from walnut. Oak and sugar maple are good, as are about most fruitwoods.

Y'all, many moons ago I worked for a small meat processor who also had a smoke room and smoked ham's, turkey, & bacon in that smoke room (all built by the owner)
He used sawdust for his smoke. One day he asked if I wanted to go with him to get a load of sawdust and I went. We pulled up to this saw mill and they loaded the pick up bed full of sawdust. I asked him on the way home what kind of wood we had just loaded and he laughed and said "Whatever they've been processing".

I learned a couple of things - Most hard woods will smoke well with meat and if asked to go with the boss to get a load of sawdust just politely decline because he really just wanted me to unload it when we got back while I was off the clock :emoji_laughing:

I don't entirely agree with the chart. I've smoked plenty of salmon with pear, for instance.

English walnut, perhaps, would be good, as the nuts have a mild flavor. I can't even stand the taste of black walnuts, though I know a lot of people who like them. To me, they taste like kerosene, so I can't imagine I'd like the smoke flavor the wood imparts.

That's interesting. As you said most folks and sites say it's too bitter / strong. Especially true they say for black walnut.
