The one with apricots was fantastic, so I'm trying again but using dried cherries this time. They were more moist, and ended up providing what I'm sure will be a nice staining effect when ready. It is still leaking enough whey that I'm going to age it for at least the first month in a ripening box instead of in a vac bag.

This looks good, so you mentioned that it will go into the ripening box for longer,
Did this finish yet , or is it still not ready for the grand opening/ slicing.
