@civilsmoker -pineapple salsa recipe please. I think that would go great with some seared ginger sesame lime Ahi Tuna steaks.
Oh yea it would be perfect for that…..

Mrs C says you owe her a fishing trip for this…lol!

She doesn’t use measurements just adds till it looks and tastes right….you will know when you have the right ratios.

Fresh cut pineapple (core removed)
Diced Red onion
Diced Jalapeño (seeded and veined)
Chopped cilantro.
Diced red pepper
Juice from 2 limes
Cumin
Garlic powder
Seasonal salt

Mix it up and let it rest in the fridge for a few hours to let the flavors “merge”

Thanks Civil! How about a crawfishing trip? She'll have to walk in the swamp with duct taped shoes and jeans with the alligators, snakes, and leeches though.....but we should catch a few sacks. Oh- and the heat and mosquitos too....

Well, since we have lived in AK mosquitos wouldn't be an issue...... leaches on the other hand.....LOL.

Oh and duct taped shoes and jeans is still a thing at our house!

Man that looks sick. Steaks have great color and salmon came out perfect .

Amazing looking plate Cortney. Sign me up for reservations at your next cook.

Point for sure

Much appreciated Chris! Just know we cook out for 6 months out so book early….LOL!

Same here. I used to like Salmon once in a while. when I started dating my now wife I had so much of it I got tired of it and never want it again.
Ah……when we lived in AK salmon, venison and Halibut were staples we would catch about 450 to 500 lbs of salmon a year…… we gave it away to friends and neighbor cause we couldn’t even come close to consuming it all…… but still LOVE IT!

For some reason my mind read "28 day dry aged prime NY-Salmon".

And not ''28-day Dry Age Prime NY "&" Salmon''

I was like I have to see this one, I'm glad that I looked, it clarified everything with the pictures of this great meal. :emoji_astonished: :emoji_thumbsup:

Teriyaki Salmon, or beef goes great with this salsa.
Grilled fresh pineapple, raw red onion, mango or papaya, dice jalapeno or red Fresno chili, diced jicama, cilantro, lemon, lime, chunky Hawaiian Red Gold Sea Salt ,McCormick Watermelon Lime Finishing Salt, or Maldon sea salt flakes, fresh coarsely cracked black pepper, and a splash of EVOO, agave or simple syrup. And it is ABSOLUTELY KILLER on fresh tuna, halibut, sturgeon, striped bass, ling or black cod, spot prawns, scallops, fish tacos, grilled chicken, grilled beef or venison steaks, and rack of lamb chops.
It's by far my most requested salsa from friends and family!!!
It's a great summertime salsa, for cook outs and get togethers, make it the night before, or at least a few hours ahead of time, as it gets better in the refer after the flavors meld together.

That looks really good, Cortney!! I'd gladly pull up a chair to that plate...

I can eat a nice King that hasn't been in fresh water
Ocean Kings are the KING….. I still have memory’s of sailing the inside passage south of Juneau Ak and my dad caught a huge King (38”) long and I BBQ it up with lemon slices and butter on the railing BBQ of the sail boat….holy crap that was good!!!!
