Teriyaki Glazed 28-day Dry Age Prime NY & Salmon

Just a quick post since life has been a bit crazy as of late..... The boy thought some teriyaki salmon would be good and as we were making up the marinade, I thought why not add a NY so I grabbed a couple 28 day Prime NYs from the freezer and bingo....a surf and turf quick plate.

I round robin seared the NY's glazing constantly... Pulled them @ INT 120 to rest in the 140 oven..... These dry aged NYs love a rare INT....

Next up was grilling the salmon.... I like to get the grates HOT then I brush them with olive right before I drop the filets....

As they set, I oiled the area that I was going to flip to, ie toward me so on a fresh clean section of grate then flip... about 3.5 mins.....

If you look close you can see the "initial grill area" and the new grill area is being used...This helps reduce sticking and makes sure the grates are sizzling hot so nice color... Pulled them after about 3 mins as I was shooting for a nice soft pink center......

Ok the quick plate....Mrs C. made up some coconut rice, IE she uses coconut milk vs water to cook the rice then finishes it with butter and salt once done..... Its way easy and TASTY! She also made up a pineapple salsa and the boy made up a ginger soy glaze to top......

Never tried teriyaki on beef but gotta be good!

Much appreciated Keith! Teriyaki beef is a top shelf in my book. There is a high end steak and seafood place in the big town next to us that does it to a waygu sirloin……man it is good!

@civilsmoker -pineapple salsa recipe please. I think that would go great with some seared ginger sesame lime Ahi Tuna steaks.
